Quinoa Fruit Salad

Serves: 6 sides
For Honey Lime Dressing:
Juice of 1 large lime
zest from half the lime
3 Tablespoon of raw honey
2 Tablespoon freshly chopped mint
For the fruit:
1-1/2 cups, blueberries
1-1/2 cups, strawberries
1 cup of raspberries
Cook the red quinoa according to the box, let cool to room temp
To make the honey lime dressing: In a medium bowl, whisk lime juice, zest, honey and mint together until combined.
In a serving dish add cooled quinoa, fruit, pour dressing over fruit salad and mix until combined.
Add a few mint leaves for decoration if wanted.
Any fruit will work here, mango is a great one to add here too.
