Sheet Pan Shrimp Boil

Serves 6-8
Ingredients
1.5 pounds small new potatoes (a mix of red and yellow is good)
2-3 teaspoon of Old Bay Seasoning
1 pound peeled and deveined shrimp
3 Tablespoon unsalted butter, roughly
3 ears of corn cut in half
1 smoked kielbasa, cut in 1/2 inch diagonal pieces
2 lemons, 1/2 lemon for juice the rest for serving.
Extra Virgin Olive Oil spray
Salt and Pepper
Instructions
Preheat oven to 425. Line a large baking sheet with parchment paper and add some extra virgin olive oil spray parchment paper.
Clean and dry the potatoes and shrimp in separate bowls.
Add the potatoes to the sheet pan first, and then add a pinch of salt and 1/2 to 1 teaspoon of Old Bay Seasoning, depending on how much seasoning you want on them. Spray with olive oil spray and add 1Tablespoon of butter to them. Let them cook for 10 minutes by themselves.
While they cook cut up the corn and sausage.
Add corn to the pan and add 1/2 tablespoon of butter to the corn and 1/2 teaspoon of Old Bay Seasoning to all the ears of corn, let cook for about 8 minutes. Then stir the potatoes around and turn corn making sure they get all the seasoning on them.
Add half of the lemon juice to the shrimp, but make sure they are dry.
Then add sausage and shrimp to the sheet pan. Add a few pinches of salt and 1 teaspoon of old bay seasoning to pan, especially on the shrimp. Cover the shrimp with 1 Tablespoon of butter. Spray a little of the extra virgin olive oil spray on all ingredients.
Bake for 12-15 minutes or until shrimp are pink. Serve with lemon wedges and enjoy!
