Tortellini with Spring Vegetables

Cook Time: 10 minutes
Serves 6
This dish is great hot or cold
Ingredients
1 bag/box cheese tortellini
1 yellow bell pepper, chopped
1 bunch asparagus, chopped
1/2 yellow onion, diced
1-2 garlic cloves, minced
1 tablespoon of grated parmesan cheese
2-3 leaves fresh basil, roughly chopped
handful of cherry tomatoes
splash of balsamic vinegar
1/4 cup pine nuts or walnuts
1/4 cup cooking water from pasta
salt and pepper
extra virgin olive oil
parsley, chopped (optional)
Instructions
Chop all ingredients first, will make cook time so much faster. slice the bell pepper and asparagus at a diagonal. Make sure to discard the bottom stems of asparagus.
Boil water according to directions on the box for the tortellini, cook as suggested, save about 1/4 cup of cooking water for the vegetables.
Add about 2 tablespoons of extra virgin olive oil to a large heated pan (medium heat) Add onions and salt, let them saute for about 5 minutes. Add tomatoes, let cook for another 2-3 minutes.
Then add basil, garlic and splash of balsamic vinegar (about 1 teaspoon) stir together and let cook for 1 minute.
Then add the asparagus and bell pepper, a little more salt and pepper and let cook for 3-5 minutes. Add the starchy cooking water, tortellini and parmesan cheese. Mix everything well, do not stop mixing for 1-2 minute, get everything coated.
Move to large serving bowl, add extra parmesan and chopped parsley if needed.
Notes
This dish is great hot or cold.
