Kale Citrus Guacamole
Prep Time: 15 minutes
Serves: 4-6
Ingredients
1/2 cup to 1 cup of chopped and blanched kale
1/2 cup of grapefruit, segments
1/3 cup of orange, segments
1 teaspoon of salt
4-5 avocados, lightly smashed
Instructions
Blanch the kale, (add kale to boiling water, lightly salted) for about 1 minute. Add quickly in ice water, till chilled.
Add lightly smashed avocado to a large bowl, add salt, then add the kale and citrus segments. Mix well, but not to much.
Add more salt if needed.
Enjoy with pita chips or tortilla chips
