
Pork Chop Sheet Pan with Sweet Potatoes and Apples

Cook Time: 20-25 minutes
Serves 4

Ingredients
4- bone in thick cut pork chops
2 cups of apples,cored and thickly cut,
2 cups of sweet potatoes, chopped small
1 sweet onion, sliced
1 Tablespoon plus 1 teaspoon, maple syrup
2 teaspoon dijon mustard
2 teaspoon grainy mustard like Maille
2 Tablespoon apple cider vinegar
1 teaspoon fresh thyme
1/2 teaspoon cinnamon
Salt and pepper
1/2 cup pecans, chopped, optional
Instructions
Preheat oven to 425. Line a baking sheet with parchment paper.
Salt and pepper the pork chops on both sides. Chop all the vegetables and apples mix with salt, pepper, 1/2 teaspoon of fresh thyme and cinnamon and lightly with olive oil.
Mix the dijon, 1/2 teaspoon of thyme, maple syrup, apple cider vinegar in a bowl. Coat the pork chops with the sauce.
Roast for 20-25 minutes or until pork reads an internal temperature of 145 degrees.
Notes
Make sure the sweet potatoes are cut on the smaller side so everything cooks at the same time.
You can use boneless pork chops but cooking time will vary with thickness of the chop.
