
Prosciutto Wrapped Halibut Sheet Pan

Serves 4

Ingredients
4 halibut filets, around 6 ounces each
2 lemons
a bunch of thyme, fresh
6-8 pieces of prosciutto
Extra Virgin Olive Oil
Salt and Pepper
Fingerling potatoes (optional)
broccoli (optional)
Instructions
Preheat oven to 400 and line large sheet pan with parchment paper.
Clean and dry the halibut filets, add salt, pepper and fresh thyme. Then wrap the prosciutto around the fish tightly the thyme will be under the prosciutto. I use 2 pieces of prosciutto per fish.
Add the cut potatoes to the prepared pan. Add salt, pepper and drizzle olive oil on them. Make sure everything is evenly coated. Add pan to oven for 7 minutes.
Add the lemon pieces (1-2 per filet) to middle of pan then add the fish on top of the lemon.
Add broccoli and then season broccoli with salt and pepper and drizzle olive oil on the broccoli and fish.
Cook 12 minutes, pull out of oven and mix the potatoes and broccoli. Leave the fish.
Cook another 6-8 minutes depending on oven time. Enjoy immediately.
Notes
Feel free to change up the vegetables to whatever you prefer.
Always buy the freshest fish you can find.
