This stoup is a cross between taco soup and tortilla soup, but just even better, especially since it takes no time to prepare. Even better on the second day, great to serve with a bunch of different topping likes, cheese, tortilla chips and sour cream. This is always a favorite among friends and family.
Southwestern Crockpot Greatness
Ingredients
2 15-ounce cans of corn
1 15-ounce can of black beans
1 15-ounce can of pinto beans
1 16-ounce jar of chunky salsa, plus more if needed or desired
6 boneless skinless chicken breast (can be frozen)
1 can of cream corn *
1/4 cup of chicken broth
Instructions
1. Combine corn, beans, 1/2 jar of salsa in slow cooker. Top with chicken breasts.
2. Pour remaining salsa over chicken.
3. Cover and cook on low for 7-8 hours. Serve with all the fixings! Enjoy!
