This one sheet pan dinner will be a crowd pleaser with the entire family. Takes 30 minutes for a healthy dinner on your table. Bursting with lemon flavor and the saltiness from the cheese makes the combination a WIN!
Healthier Lemon Parmesan Chicken
Prep Time: 15 minutes
Cook Time: 30 minutes
Serves 4
Ingredients
3-4 chicken boneless, skinless, breasts
3-4 tablespoons extra virgin olive oil (EVOO)
2 garlic cloves, minced
3-4 heads of broccolini or asparagus (whatever is in season)
2-3 teaspoons of Italian Seasoning
2 teaspoons of garlic powder
1 teaspoons of paprika
1 teaspoon of onion powder
2 lemon, 1 sliced and the other juiced and zested
3-4 Tablespoon, of freshly grated Parmesan cheese
4-5 yellow potatoes, diced (optional)
1 yellow onion, sliced
Salt and Pepper
Instructions
1. Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.
2. Add the potatoes and onion with salt and olive oil, 1 teaspoon of Italian Seasoning to one side of the baking sheet.
3. Add the seasonings and cheese to a bowl and mix, set aside. Add olive oil and some of the lemon juice to the chicken followed by cheese mixture. Just add enough to cover the top of chicken. and add the lemon slices over the chicken.
4. Roast for 15 minutes, toss your asparagus with olive oil, salt and top with extra slices of lemon and lemon juice. Toss your potatoes so everything cooks together.
5. Roast for additional 12- 15 minutes or until chicken is ready
6. Top with lemon zest
