Slow Cooker Lemon Chicken
Prep Time: 12-15 minutes
Cook Time: 7 hours on low
Serves 6-8
Ingredients
4-6 pieces bone in and skin on chicken ( a mix between, wings, thigh and breast)
2-4 lemons (zest of 1 lemon for marinade and 1 lemon of slices)
1/3 cup of lemon juice
1 yellow onion, sliced
1 pound of yellow potatoes, chopped
2 broccoli crowns, chopped
6 garlic cloves, (3 minced and 3 smashed)
2 teaspoon, dijon mustard
1/4 cup of extra virgin olive oil and more for searing chicken
1 teaspoon of garlic powder
pinch of garlic salt (optional)
2 teaspoon dried thyme
2 teaspoon Italian Seasoning, I like Frontier Co-Op
1.1/2 teaspoon oregano
24 ounces, chicken broth or stock
fresh parsley, optional for garnish
Instructions
Slice the onion and chop the potatoes and add to the slow cooker. Add a splash of extra virgin olive oil on them in the slow cooker and a heavy pinch of salt and pepper. Add chicken broth.
Create the marinade: In a bowl mix the lemon juice, olive oil, thyme, dijon mustard, 3 garlic cloves minced, Italian Seasoning, oregano, garlic powder, salt and pepper. Taste
Pat dry the chicken and in a large sauce pan heat on Medium high and add olive oil. Add salt and pepper to the chicken and when the pan is ready add chicken to sear. 2-3 minutes on the skin on side. Once seared add to the slow cooker. Add the marinade on top of chicken. add the smashed garlic on top and a little more salt and pepper. Add slices of lemon on top of chicken.
Cover and cook on low for 7 hours.
30 minutes before you eat add broccoli.
Notes
If you use bone in chicken please note that the meat falls from the bone so you may need to pull bones from slow cooker it’s that tender!
I really recommend to use skin on and bone in for this recipe.
You do not need to add the broccoli at the end, we did for something green on the plate.
