Sweet & Spicy Chicken Meatballs

Makes about 18-20 meatballs
Ingredients
2 pounds of ground chicken (you can split up have breast and thigh or all breast)
4-5 garlic cloves, minced
2 large eggs, lightly beaten
1/2 teaspoon of paprika
1 teaspoon onion powder
1 cup of panko breadcrumbs, (optional)
salt and pepper
Sauce
1/2 cup of hot sauce, like Franks
1 cup light brown sugar
2 Tablespoon apple cider vinegar
juice from half a lime
zest of half of lime
1/4 teaspoon red pepper flakes (optional)
Instructions
Preheat oven to 450 and line large baking sheet with parchment paper, set aside.
In a large bowl add the ground chicken*, eggs, garlic, panko if using**, paprika and onion powder
Use hand to mix all together, do not over mix. Shape them into small balls, smaller than golf ball size.
Add them to baking sheet and bake for 12-14 minutes. They can be close together.
While the meatballs bake make the sauce. Combine all the sauce ingredients into saucepan and mix well.
Let the sauce come to a bowl, then simmer on low for 8 minutes until everything has blended together. Sauce will thicken.
Serve the meatballs on the sauce or spoon the sauce over the meatballs, just enjoy immediately.
Add a little lime zest when plating.
Notes
*For more flavor I like to mix half breast and thigh, but you can do all breast if you want less fat.
**If you do not use the panko breadcrumbs, just make sure the meatballs are small so they stay together well.
Love serving over cauliflower rice so the sauce seeps in.
