Turkey and Spinach Meatballs (Gluten Free)
Prep Time: 15 minutes
Cook Time: 25-30 minutes
Serving Size: 18-22 meatballs
Ingredients
1 pound of ground turkey breast
.5 pound ground turkey thigh
10 ounce chopped spinach, thaw if frozen
1/3 cup of Parmesan cheese
1 teaspoon of Italian Seasoning
2-3 garlic cloves, minced
1/2 teaspoon, onion powder
1 egg, beaten
1/2 teaspoon paprika, optional
Salt and Pepper
Instructions
Preheat oven to 400, and line a large baking sheet with parchment paper and on top of parchment paper add a roasting rack. This is where the meatballs will cook, it will drain off the fat, but still keep them tasting amazing.
If the spinach is frozen, you can cook in a pan until it’s warm and then make sure you have squeezed the spinach dry.
In a large bowl bowl combine all ingredients and mix well, but do not over mix, just until evenly combined.
Roll balls into a little larger than golf ball size and put on top of roasting rack, fill up the rack.
Spray all the meatballs with some olive oil cooking spray and bake for 25-30 minutes or start to brown
Let cool for a few minutes
Notes
You can bake these a head of time and pull out how many you need and heat back up in oven, just spray a little Olive oil spray on them.
Just make sure you squeeze the spinach dry.
