
Slow Cooker Pork
Prep Time: 20 minutes
Cook Time: 8 hours low temp in slow cooker
Servings: 6-8 people

Ingredients
4-5 pound pork shoulder or boston butt
1 yellow onion, sliced
1/3 cup paprika
1/3 cup chili powder
1/4 cup brown sugar
1 Tablespoon cumin
3 teaspoon garlic powder
2 teaspoon celery salt
2 teaspoon dry mustard
1 teaspoon cinnamon
3 garlic cloves, smashed
lime zest and juice from half of lime
dijon mustard to rub on pork before seasoning
salt and pepper
Extra virgin olive oil
Apple Cider or Apple Juice
optional: cayenne pepper, onion powder and smoked paprika
Instructions
Turn slow cooker on low temperature.
Add a little extra virgin olive oil to bottom of pan. Mix all dry ingredients together in a bowl.
Pat the pork dry with a paper towel, add light layer of dijon mustard to the pork. Then add the dry ingredient mixture to the pork, finish off with a little salt, pepper and lime zest. You may have some dry mixture leftover that is fine, all depends on size of pork.
If you have time to marinate the pork for up to 30 minutes will add flavor, but not required.
Add sliced onions to the bottom of the pan and a little salt to them.
Add pork to slow cooker on top of onion. Add 1/2 cup of apple cider, lime juice and 1/3 cup of water. Needs to cover about 2/3 of pork to 3/4.
Cover and let cook for 8 hours.
Notes
This recipe is all about the great topping as well, chop of some pico, guacamole and cheese. Have everything out so your guests or family can create their own taco. A fun night for a taco bar!
