White Chicken Chili
Serves 4-6
Ingredients
4-6 chicken breast (organic, boneless/skinless)
3-4 cups of chicken broth
1 can of Great Northern Beans, rinsed and drained (BPA free)
½ yellow onion, sliced
1 garlic clove, minced
1 teaspoon oregano
2 teaspoon cumin
2 teaspoons Frontier Co-Op Mexican Fiesta Seasoning
1 ( 4-ounce) can diced green chilies
1 can of corn, drained (BPA Free)
salt and pepper
juice of half a lime
zest from the lime
2 teaspoon of Chili Powder
Instructions
- Add onions and chicken to your slow cooker, then add the rest of the
ingredients. Cook on low for 6-7 hours. If you have time to stir
throughout do a few times. - Before you shred the chicken get a cup full of the beans, onion and
blend with an immersion blender, if some corn gets in there that is
fine. Add the blended part back into soup, will thicken the soup a bit
instead of using a cream. - Pull chicken out and shred with 2 forks, add chicken back in and stir
soup. - Serve in bowls with toppings out for everyone to pick. ENJOY!

Optional Toppings: jalapenos, avocado, shredded monterrey jack cheese, tortilla chips, cilantro, limes
