
These little morsels are bursting with flavor, they are so good. I make this weekly for my family, and each time put in different ingredients like mushrooms, red bell peppers. Great meatless Monday treat, or throw in some ham, chicken or turkey. But no matter how you make them, give them a try!

Broccoli Quinoa Bites
Ingredients
1 cup of uncooked quinoa (ancient harvest recommended)
2 cups of veggie or chicken broth
3 eggs lightly beaten
2 cups of frozen broccoli, cooked and diced
1/3 cup of yellow onion, diced (optional)
1 1/2 cup shredded cheddar cheese (a blend goes well here or sharp cheddar)
1/2 teaspoon paprika
1-2 teaspoons Italian Seasoning (Frontier Co-op recommended)
salt and pepper to taste
Instructions
1. Preheat oven to 350 degrees.
2. Cook quinoa as directed.
3. Spray muffin tin with EVOO.
4. In a large bowl combine cooked quinoa, cut up broccoli, eggs, onion, cheese and seasonings. Mix everything together, add salt and pepper and spoon ingredients into muffins tins.
5. Bake at 350 degrees for 30 minutes, let cool for 30 minutes. (Remember that oven temperatures do vary.)
Notes
These are extra great served with a salad.
