Avocado Pesto Zoodles
Prep Time: 15 minutes
Cook Time: 10 minutes
1 large avocado, ripe
2 cloves garlic
half the juice of a lemon
1 Tablespoon of Hemp Hearts (seeds)
3 Tablespoon of water
1/4 cup pine nuts
1/3 cup of fresh basil
pinch of pink salt
1 cup of cherry tomatoes (optional)
Add all ingredients besides the zoodles and tomatoes to a food processor and blend. Pour the olive oil into the processor while it blends for a thicker, creamier consistency. Taste and change according to your preferences.
Add olive oil to large pan and toss zoodles in for 4-5 minutes until warm with tomatoes. Move zoodles to a serving bowl and top with pesto and extra hemp seeds and pine nuts.
You can add some whole wheat or GF pasta with the zoodles
Salmon or shrimp would be another great protein source with this dish.
