Chicken Lettuce Wraps

Chicken Lettuce Wraps

Prep Time: 20 minutes, can be done early in day
Cook Time: 10 minutes
Serves 6

Ingredients

1.25 pounds ground chicken breast

2 heads of boston, bibb lettuce, or your choice of lettuce

1/2 cup to 3/4 cup of raw broccoli, chopped small

1 red bell pepper, diced

3/4 cup of white button mushrooms, chopped bite size

4 Tablespoon Hoisin

3 Tablespoon Rice Vinegar

4-5 Tablespoon Tamari OR soy sauce (tamari is GF soy sauce)

4-5 Tablespoon sesame oil

1 teaspoon of five spice powder 

1 teaspoon garlic powder

Instructions

Prep this meal before you start cooking the chicken, this meal will come together very quickly.

Chop all vegetables and add to bowl.

Make the Dressing: add, 3Tablespoon of sesame oil,  3 Tablespoon of hoisin, 3Tablespoon of tamari and 2.5 Tablespoon of rice vinegar, 1/2 teaspoon of Five Spice Powder. Taste it make sure you like, if you want sweeter add more hoisin, if you want more acidic add more rice vinegar, if you want more salty add more Tamari…create what works for you.

Add 1 Tablespoon of sesame oil in skillet over medium heat, add the ground chicken and break up chicken into small pieces, add 1 teaspoon of tamari and 1 teaspoon of garlic powder. Let cook through, 8-10 minutes.

Remove chicken to a bowl and add another 1 Tablespoon of sesame oil to skillet. Add the vegetables to pan and 1/2 teaspoon five spice powder, let cook for about 5-6 minutes, cooked through. Then add chicken back into pan, mix well.

Add the sauce to the pan and stir for about 2 minutes and serve immediately.

 

Notes

Feel free to change up the vegetables to what you prefer.
