Spicy Shrimp Bowl with Chili Lime Vinaigrette

Spicy Shrimp Bowls

Prep Time: 12-15 minutes
Cook Time: 10 minutes
Serving Size: 6

Ingredients

1 pound, peeled and deveined shrimp

lettuce of your choice, I use a mix or romaine and spinach

1 (BPA free, 14ou) can sweet corn (if summer time and you can grill an ear of corn that is great)

1 can (BPA free, 14ou) black beans

4- 6 pieces of bacon, cooked and chopped

1 red bell pepper, diced

1 avocado, diced

handful of cherry tomatoes

Extra virgin Olive oil

1 teaspoon chili powder

1 teaspoon of garlic powder

inch of cayenne

lemons

1 teaspoon of cumin

Salt and pepper

Chili Lime Garlic Vinaigrette

1/4 cup extra virgin olive oil

1-2 Tablespoon, red wine vinegar

2-3 garlic cloves, minced

1 teaspoon cumin

1/4 teaspoon, cayenne

1 teaspoon chili powder

Juice and zest of an entire lime

1/2 teaspoon to 1 teaspoon Dijon Mustard

pinch of red pepper flakes, optional

 

 

 

Instructions

Chop the lettuce you are using and add to a bowl, a mix of greens is always good.

Rinse, drain and dry your beans, add to one section of bowl

Rinse and drain the corn and tomatoes and add to one section of the bowl

Cook the bacon and add on top of lettuce in one section of bowl

Rinse, drain and dry the shrimp. Heat a pan over medium high heat and add garlic and shrimp to pan. Add chili powder, garlic powder, cumin, cayenne, salt and pepper to the shrimp. Add juice of 1 lemon.  Mix well and let cook about 2-3 minutes on each side.  Add to your bowl.

While the shrimp cook whip up your dressing. Add all ingredients together, tasting as you make, to get it just the right spice for you.

Add anything else to salad bowl that you want, like the avocado and red bell pepper and then add the dressing.

Notes

Spending the extra few minutes to make a dressing will change the meal, don’t buy the pre made at the store, you can make your own ahead of time and leave in refrigerator.
