Irish Soda Bread
Prep Time: 20 minutes
Cook Time: 45-50 minutes
Serving Size: 1 loaf
Ingredients
3 and 1/4 cups of all purpose flour
4 Tablespoon of cane sugar
1 teaspoon of baking soda
1 teaspoon of kosher salt
1 teaspoon of cinnamon
1-3/4 cup of buttermilk
4 Tablespoon of unsalted butter
1 large egg, beaten
1 cup of raisins
Instructions
Preheat oven to 375. Line a sheet pan with parchment paper.
Combine flour, sugar, cinnamon, salt and baking soda in a large bowl and mix until combined.
Add butter to bowl and mix with hands to where butter is mixed into the flour.
Add buttermilk and egg into a mixing cup. With a fork lightly beat the egg.
Add the buttermilk mixture to the flour mixture slowly in batches.
Combine raisins into the dough and mix. Dough will be wet.
On a very well floured surface dump the dough and knead a few times. Place the loaf onto baking sheet. Cut an X on top of the dough.
Bake for 45-50 minutes.
Let cool on wire rack.
Notes
Make sure to mix the raisins with a little flour so they don’t all go to the bottom.
