Oatmeal Chocolate Chip Energy Bites

We all need a little more energy, am I right? These are easy, really, really delicious, and favorited by all. Simple as that.

Oatmeal Chocolate Chip Energy Bites

Makes 18 - 24 energy balls

Ingredients

1 cup of rolled oats (gluten free if needed)
3/4 cup of creamy peanut butter
2 to 3 tablespoons of honey or maple syrup
1/2 cup ground flax
1 teaspoon chia seeds
1/2 cup semi-sweet chocolate chips
3 Tablespoons of shredded coconut, optional***

Instructions

  1. Mix all the ingredients together in a medium bowl.
  2. Round them out into small balls (about 1 tablespoon size or smaller) and place them on parchment paper-lined baking sheet.
  3. Roll them in shredded coconut if you would like
  4. Refrigerate for a few hours, serve chilled.

Notes

*If you like coconut, add the shredded coconut in the recipe and lightly coat the outside of the bites as well. Just roll in some shredded coconut after you have formed the balls
